zsh: correct syntax option to syntax-highlighting ( #5792 )

The current syntax of highlighting style is outdated and not working as well. So this pr aims to update it so follow `zsh-syntax-highlight`` new syntax [example](e0165eaa73/highlighters/main/main-highlighter.zsh (L32)

tests: rework derivation stubbing
...
Instead of having to manually stub packages that should not be
downloaded we instead automatically stub all packages (except a small
list of whitelisted ones). Tests can re-introduce the real package by
using the `realPkgs` module argument.

zsh: fix custom syntax highlighting styles ( #4236 )

Previously, lines in .zshrc were added with quotes in keys
(e.g. ZSH_HIGHLIGHT_STYLES['comment']='fg=#6c6c6c'). However, zsh
considered these quotes to be part of the key, so the "comment" key
remained unchanged.

Custom styles allow overriding the default colors.
Example:
```nix
zsh.syntaxHighlighting.styles.comment = "fg=#6c6c6c";
```
